i'm going to guess you grabbed any old packet of poppy seeds at the store? i'm seeing that some poppies (mostly hybrids) can change color based on soil quality, seasonal differences, etc. so next year, they may be red.
If you like flowers that can change color with aoil chemistry, try hydrangeas. My wife and I have a bunch which range from white to pink to blue to purple. They prefer an acidic soil.
